If you’ve followed me for a while, you may recall that I entered Swanson Vitamins recipe contest in 2011 and won for my Medjool Date and Walnut Bread! Since that time I continue to love the quality of their products, savings on so many of my favorite brands and the ease of ordering online and prompt shipping.
Overnight Oats are not a new thing but I realized when I received my recent shipment that I had never posted how I prepare my oats. While I am a morning person, during the week I do not want to have to deal with preparing anything from scratch. I have my espresso ready to go and will prepare my overnight oats in individual servings for 3-4 days. Basically the recipe is placing an equal amount of oats and non-dairy milk together and refrigerate overnight. The next morning, your oatmeal is ready. I prefer not to warm mine up, but can be by adding a bit more liquid in and heating.
I like to add in extras with my oats. In my glass jar, to 1/2 cup of oats, I add in 1 tablespoon of Chia Seeds, 1/2 tablespoon of flax seed meal, 1/2 tablespoon of wheat germ, a pinch of salt and 1/2 cup non-dairy milk. Depending on the season, dried cranberries and cinnamon are added as well. In the morning, I may stir in a little more non-dairy milk, topping my oats with whatever I desire that day…this time it was cranberry sauce (simmering fresh or frozen cranberries with cinnamon, fresh squeezed orange juice and maple syrup til bubbling and broken down), non-dairy yogurt, granola and a drizzle of maple syrup!! It’s like having dessert for breakfast!!
I love being in the kitchen. Early mornings, soft music, a hot espresso. Easing into the preparation of delicious meals. Glancing through cookbooks, gathering inspiration and planning my day. I look forward to the cycles of the seasons, the pleasures of tasting and savoring and sharing this with those dear to me. Weekends are special to me as my week days are often rushed, but still I create the ambiance, light the candles, set the table and uncork the wine.
